Wow, Theresa~talk about coincidences! I just made my lentil soup when I saw your post and got to read how yours is made...pretty much the same but I added diced ham and rice! I was then wanting to make arancini (sp?) as I had sooo much rice... leftover and found your recipe for it, for the first try it turned out great! I used an egg and panko after rolling the balls which had a hunk of cheese inside. You have a lot of great tips! T Y V M! Janine!
